Asparagus wrapped in prosciutto
Serves two to three
A retro-classic of sweet, English asparagus and salty, cured Italian ham. This makes a moreish nibble to serve with drinks, or a great accompaniment to chicken or white fish such as ling, monkfish, cod or pollack.
Ingredients
- 250g English asparagus
- 200g San Daniele ham
- 25g butter
- 6 sprigs of thyme
- Freshly ground black pepper
Method
1. Heat the oven to 180°C or gas mark 4.
2. Snap off the woody ends of the asparagus - these can be used to make a lovely soup - and give the spears a rinse under cold water. Pat dry with kitchen towel, before wrapping each asparagus spear carefully in prosciutto.
3. Dot the base of a baking dish with butter and add the asparagus, thyme sprigs and black pepper. Bake in the oven for 15 minutes, or until the asparagus is tender and the ham nice and crispy.
