Lamb cutlets

An easy-peasy super impressive BBQ dish that works just as well with a hot griddle if the sun goes in. Godfrey's lamb cutlets are French trimmed giving them a handy natural handle for munching in the garden.

  • 8 lamb cutlets
  • 4 sprigs fresh thyme, leaves only
  • 2tbsp extra virgin olive oil
  • Sea salt
  • 8 lamb cutlets

Method

1. Marinade the lamb cutlets in the thyme, oil, sea salt and pepper for 10 minutes.

2. Grill over hot coals or in a griddle pan for 2-3 minutes either side, which will leave the meat slightly pink but not too bloody. Enjoy with our Italian salsa and a glass of something red and tasty.
