Serves four with accompaniments

Lamb kofte

Our recipe for lamb kofte kebabs, delicious and economical in equal measure. Serve with red cabbage and pomegranate molasses, tzatziki and homemade flatbreads (though Earth's pitta breads make a pretty decent substitute if you're short on time).

Ingredients

  • 500g minced lamb
  • 3 cloves garlic, crushed
  • 1tbsp ground cumin
  • 1tsp ground cinnamon
  • 1tsp chilli powder
  • 1tsp smoked paprika
  • 2tbsp flat-leaf parsley, finely chopped
  • 2tbsp coriander, finely chopped
  • 1tsp sea salt
  • Black pepper
  • 1/2 tsp caster sugar
  • 2tbsp olive oil
  • 500g minced lamb

Method

1. Combine everything except the oil and mix well with your hands.

2. Shape into fat sausages, then thread onto a skewer and give the mixture a final press to make sure it's secure. 

3. Lightly oil the surface of each kebab.

4. Grill over hot coals or in a hot griddle pan until golden brown all over - usually 8-10 minutes. Serve with flatbreads, tzatziki and red cabbage.
