Pork souvlaki
Makes 4 decent sized kebabs
Tender, succulent pieces of pork enhanced with a brief marinade and a spot of char-grilling. Serve with Turkish or Greek style accompaniments, or eat straight from the stick while you bask in the sunshine.
Ingredients
- 400g pork tenderloin
- Zest and juice of 1 lemon
- 2 garlic cloves, finely sliced
- 1tsp dried oregano
- 3tbsp olive oil
- Black pepper
- 400g pork tenderloin
Method
1. Cut the pork into large chunks, around 2.5-3cm square.
2. Mix together the lemon juice and zest, garlic, herbs, oil and lots of black pepper before adding the pork pieces to marinate (don't add any salt at this point as it can toughen the meat). Leave to marinate for 1 hour in the fridge.
3. When you're ready to cook the pork, sprinkle with a little sea salt before threading onto skewers (if using wooden ones make sure you soak them first). Cook the souvlaki over a barbeque or in a hot griddle pan until just cooked through - around 10 minutes.
