Saponara's legendary trattoria-style pizza, with griddled aubergines and courgettes, mozzarella, Parmesan shavings, rocket and a tomato base.

It has a crisp base, just the right amount of chewiness and - as you'd expect from The Independent's top ranked deli - knockout toppings. Now Marco has worked out a way for you to achieve the same results at home.
 
The pizza dough is left to rise overnight, then baked the following day in Saponara's pizza oven for just long enough to hold together in transit and impart that all-important stone baked flavour. It's then topped with a tomato sauce and boxed up with a selection of separately wrapped toppings.
 
Serves 2-3 with salad.
 
To cook
 
1. Transfer the base to a baking tray and bake at 200°C in the oven for eight minutes.
 
2. You can either add your toppings and return the pizza to the oven for two more minutes, or bake the base for a further two minutes before adding the toppings and serve fresco-style. Either way, serve with a drizzle of good extra virgin olive oil and a twist of black pepper.

Saponara's Tortelloni are large, stuffed, fresh pasta shapes which make an ideal starter or speedy lunch dish. The black truffle and ricotta ravioloni are wonderful served simply with a little cream and shavings of black truffle, or extra virgin olive oil and Parmesan cheese.

Saponara advise three Tortelloni per person for a starter or light lunch (approx 150g).

Saponara fresh, filled pasta is handmade, delicious and as a result, very popular! Availability can be limited so we advise you to add a note to this product when going through the checkout stating whether you'd like something else if it's out of stock on the day.

Shelf life:

Unlike supermarket 'fresh' pasta, Saponara's fresh pasta is not pasteurised and shelf life depends on fridge temperature; in a domestic fridge, it should be consumed within one to two days of delivery. You can also freeze the pasta straight away and cook it from frozen – just cook for an extra minute in boiling water.
